Easy Chocolate Fudge

Ok, can't take merit for this recipe, I got it from a youtube channel that I love! 
I know Steve really likes fudge so I thought I would give it a crack!


1 2/3 cups sugar
2/3 cups Evaporated Milk
2 tbsp butter
2 cups EACH miniature marshmallows and chocolate chips
1 tsp vanilla



Place sugar, milk and butter in a saucepan and bring to a rolling boil. 
Stir continuously for 4 minutes and then remove from heat.
Add in marshmallows, chocolate and vanilla - stir until all melted and combined.


Now you can place in a lined baking dish and refrigerate, or, like I did, I poured about a tablespoon of the mixture into small paper chocolate cups (itty bitty cupcake papers). Takes a little more time, but I thought it looked cute and they are much more manageable in bite sized portions.


Make sure you store it in the fridge though, because it's a very soft fudge.

Decorating Cupcakes

Ok, so this is not a recipe. Frankly I can never be bothered making cupcake/cake recipes from scratch. I like to cook savoury, but I do love to decorate. Often I get commended for how creative I am with cakes etc. 
So I thought I would do a little display and notes on how I have created these.
Please bear in mind, these are my very first attempt at using my new decorating tools. 
Obviously as I get better, so will the results!
Also, never using mini cupcakes to decorate again!! 


So the chocolate icing I used was crap! I decided to try out the stuff that came with the box, it definitely wasn't firm enough - I should have added more icing mixture to it, or just scrapped it completely and went with a chocolate butter cream icing like the others!
Anyway, we have nests with eggs (was trying different ways of weaving the nests), an easter basket (which needed a much bigger cupcake to work with), a cherry pie (just cos it's cute - I know it has nothing to do with easter) and some grass with eggs/bunny in them.

Shredded BBQ Beef - Slow Cooker

I've been looking for a long time for a shredded bbq recipe. 
Everything seems to have a lot of different spices, I'm more inclined to go for something simpler first though!
So here's one that I created!


1.5kg chuck roast
1 teaspoon garlic granules
1 teaspoon paprika powder
1 teaspoon cayenne pepper
2 teaspoon spicy season-all
2 cups bbq sauce


- Trim roast of any fat and place in sprayed slow cooker. Sprinkle with seasonings and pour bbq sauce over meat. Cover and cook on low for 6 to 8 hours. 
- Remove roast from slow cooker and shred. Return meat to cooker, cover and cook for an additional hour.

Easy Chocolate Pancakes

First of all, this is a really big cheats way of doing this.
I'm not really going for any culinary skill points with this, it's just quick, easy and delicious!


1 Pancake Mix Bottle - pre made
3 tablespoons cocoa
2 teaspoons vanilla essence
Milk


Firstly when I make pancakes from the pre made shaker bottles, I always use milk only for the liquid and add vanilla essence. So really all I did was add 3 heaped tablespoons of cocoa powder to the mix and whisked.
Then cook as per normal!




It's really that simple!
They go great with ice cream, for a really delicious Sunday brunch - cos let's face it, who's up in time for breakfast on a Sunday!?

Cob Loaf Dip

This was a big hit at work, so I thought I would post the recipe!
I'll be making it again that's for sure, and somehow, I don't think I will get a choice!

1 x 250 packet philly cream cheese - softened at room temperature
1 x 250 tub sour cream
3/4 cup bacon - diced finely
2 spring onions
3/4 cup grated cheese
2 tablespoons sweet chilli sauce
1 cob loaf

1. Pre heat oven to 180 degrees.
2. Cut top off cob loaf and pull out the bread inside.
3. Combine all ingredients and place in loaf.
4. Wrap in foil and place in oven for 30 minutes.
5. Remove foil and stir. Cook for further 20 minutes.

Banana Bread

1 Cup Plain Flour
1/2 Cup of Self Raising Flour
1 Cup Brown Sugar
1 Teaspoon Ground Cinnamon
125g Butter, melted, cooled
2 Eggs, beaten
3 Ripe Bananas, Mashed.


Pre-heat oven to 180 degrees.
Grease a muffin tin - I used a muffin tin because I don't have a loaf pan.


1. Sift flour and cinnamon together and combine with sugar.
2. Beat eggs and butter together. Stir in banana. Spoon into muffin tin.
3. Bake until skewer comes out clean from the centre. Approx 20 minutes. 


SO good! And so simple!
I'm definitely going to make these more often!
